Doi Hin means stone mountain. The ridge gives us the view, the mineral soil gives the coffee its spine, and the kitchen answers with the food this province has cooked for six hundred years.

Everything we brew is grown within ninety minutes of this terrace.

Longan, brown sugar, soft acidity.

Ripe plum, black tea, wine-like body.

Beef shin braised four hours in our own curry paste, crisp egg noodle, pickled mustard green, lime.

Pork belly, tamarind, ginger and a Burmese-leaning spice blend, cooked down until the fat gives way.

Northern herb sausage, made in house, grilled over longan charcoal and served with kaeb moo.
Teak posts on a dark river-stone plinth, terracotta tile, and the crossed กาแล finials that mark a Lanna roof. The glass is the only modern thing here, and it is there for the valley.

We came for the view and stayed four hours for the food. The khao soi is the best I have had anywhere in the north.
Drive up slowly and arrive before the fog lifts. The first hour on the terrace is the whole point.
A rare thing — a place with a view this good that still takes the cooking seriously.
Ninety minutes from Chiang Rai city. The last six kilometres are sealed but steep, with switchbacks and no barrier on the valley side. Comfortable in any car in the dry season; take it slowly after rain. Not suitable for coaches.
